The Lodge and Spa is seeking a Pastry Chef for our Guest Lodge.
The Lodge & Spa at Three Forks Ranch, an exquisite guest destination, has recently partnered with the top-ranked Mayo Clinic to form an unparalleled partnership in the Wellness Industry. As we are expanding our facility to include a 20, 000+ sq. ft. wellness facility and new guest accommodations, we are also looking to expand our incredible Three Forks Team.
The main purpose of the Pastry Chef is maintaining and exceeding our fine-dining services for guests, including proper food handling, preparing fresh breads and pastries daily, and thoughtfully curating dessert menus.
Job Responsibilities (include, but are not limited to):
- Operate and manage the pastry section of the kitchen, while working together with the other chefs on shift
- Provide two nightly desserts for a seven-day cycle menu; making sure these desserts are seasonal and keeping up with current trends
- Research and develop recipes
- Decorate and present pastries and baked goods in a tasteful and beautiful manner
- Work with the Executive Chef to order ingredients, supplies, and equipment needed
- Teach coursework related to pastry making and train new and old members of staff working in the kitchen
- Meet with customers to discuss custom-made desserts or baked goods for special occasions
- Ensure the pastry section of the kitchen adheres to health and safety regulations
- Lead two pastry classes of your choice for our guests in our Kitchen Acadmey
- Prepare daily breads and/or rolls along with sour dough starter
- Help prepare pizza dough when needed
- Prepare breakfast pastries, croissants, chocolate croissants, biscuits, English muffins on a daily/weekly basis or as needed
- Prepare healthy baked goods for our new wellness café
- We expect diligence, thoroughness, and an exceptional work ethic

- Will report directly to the Executive Chef and work closely with other members of management including Lodge Manager and Assistant Lodge Managers
Qualifications:
- 4+ years pastry experience, preferably fine-dining – required
- Valid US Driver’s License with acceptable driving record – required
- Well-maintained vehicle, preferably with AWD or 4WD capabilities – required
- No pets – required
- Intermediate to advanced knowledge of internet, email – required
- Previous knowledge or use of Agilisys or other food reservation systems – preferred
- Must have the ability to read, write and speak English – required
- Able to communicate with guests and colleagues with diplomacy and tact – required
- Must be able to lift up to 50 lbs. – required
- Must be able to work weekends, holidays, and evenings – required
- Must be able to stand and walk for up to 8 hours – required
- Guest relations, problem-solving, training – required
Benefits:
- Hourly wage starts at $18 per hour; pay based on experience
